Apple and sour cream slice
- 1 packet vanilla cake mix
- 1 cup of desiccated coconut
- 3 heaped tablespoons of melted butter
- 1 tin of pie apples
- 200 grams of sour cream
- 1 egg
Combine cake mix with coconut and melted butter. The mixture appears a little dry, but don’t worry it’s meant to be like this.
Press into a square cake tin and bake for around 10 minutes in a moderate oven.
Place the pie apples on top of the cake base whilst still warm.
Combine sour cream with a beaten egg and spread on top.
Dust with cinnamon or coconut, whichever you prefer (cinnamon is best for presentation).
Return to oven and bake for around 20 minutes.
Allow to cool (the sour cream topping will set), refrigerate and slice into smallish pieces as it is quite a rich slice.
