Barbecue glazed meatloaf

For the meatloaf:

  • 500g lean beef mince
  • 500g pork mince
  • 1 cup wholemeal breadcrumbs
  • 1 onion, finely chopped
  • 1 tbsp curry powder
  • 1 egg
  • 1/4 cup milk
  • 1 tbsp parsley, finely chopped
  • 1 tbsp mint, finely chopped
  • 1 red onion, peeled and sliced into wedges

For the barbecue sauce:

  • olive oil
  • 1 onion, diced
  • 2 garlic cloves, finely chopped
  • 1/2 cup tomato puree
  • 1 tbsp balsamic vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 cup beef stock

Method

For the meatloaf:

Preheat oven to 180°C or 160°C fan-forced. Line a baking tray with baking paper and set aside. Mix all of the ingredients for the meatloaf together except for the onion wedges. Form into a loaf shape and place onto the tray.

Press the onion wedges onto the top of the loaf and then place in the oven for 30 minutes.

For the barbecue sauce:

Meanwhile, heat a little olive oil in a saucepan over medium heat, add the diced onion and garlic and cook for five minutes or until soft. Add remaining sauce ingredients, bring to the boil then simmer for ten minutes.

Once the meatloaf has been cooking for 30 minutes, remove from the oven and pour over the barbecue sauce, ensuring the loaf is properly covered. Return to the oven and cook for another 20 minutes, basting every now and then.

Serve with a green salad, bread and/or mashed potatoes.

Notes:

  • You can cook this in a lidded casserole dish or use tightly sealed foil to cover.
  • Basting meatloaf periodically will give it a nice sweet crust.
