Grease a large mug with non-stick cooking spray or oil; in the mug whisk together the eggs, salt and pepper. Stir in spinach, cheese and spring onions.
Microwave on High for 30 seconds; stir mixture. Repeat twice until eggs are set and uniformly cooked. Let stand for 1 minute before serving.
