Cheese and Spinach Breakfast Frittata

Ingredients
  

  • 2 large eggs
  • 1 pinch salt & pepper
  • 1/2 cup baby spinach chopped
  • 2 tbsp cheddar cheese
  • 1 tbsp spring onion

Instructions
 

  • Grease a large mug with non-stick cooking spray or oil; in the mug whisk together the eggs, salt and pepper. Stir in spinach, cheese and spring onions.
  • Microwave on High for 30 seconds; stir mixture. Repeat twice until eggs are set and uniformly cooked. Let stand for 1 minute before serving.

Notes

TIP: Top with diced avocado and fresh salsa for a tasty garnish.
