Zingy zucchinis

These tomato roasted zucchinis are covered in a melted cheese and are a great side dish to chicken or veal schnitzel. Baking zucchinis like this keeps them moist and flavourful and is a easy way to increase the vegetable intake for your family.

  • 1 kg zucchini thickly sliced
  • 4 tbsp basil chopped
  • 500 ml passata
  • 60 grams cheese grated


  • Preheat oven to 180°C.
  • In a baking dish, lay zucchinis and sprinkle over chopped basil.
  • Pour over passata and sprinkle with cheese.
  • Cover with foil or a lid and bake for 30 minutes.


I like to sprinkle a little garlic salt or garlic powder over these zucchini for extra flavour
