Easy sausage kebabs

These easy sausage kebabs are an easy way to sneak some veg onto the plate.

Equipment

  • 8 wooden skewers

Ingredients
  

  • 8 Hellers Cheesymite Sausages
  • 1 red onion cut into wedges
  • 1 large capsicum deseeded and cut into chunks
  • 4-8 cherry tomatoes quartered/halved
  • 1-2 tbsp olive oil
  • 1 tsp smoked paprika

Instructions
 

  • Slice each sausage into three pieces.
  • Cut each red onion wedge in half so you have 8 pieces.
  • If the cherry tomatoes are big enough, quarter them, otherwise slice in half.
  • Alternate sausages, red onion, capsicum and cherry tomatoes on to each skewer. Take care when pushing the sticks through that your hand is out of the way.
  • If cooking on the BBQ, spray the grill with cooking oil, lay on the kebabs then brush with a little olive oil. If cooking in the oven, place the kebabs on a wire roasting rack and brush with a little olive oil. Sprinkle with half the paprika.
  • Cook for 6-8 minutes until the sausages and vegetables start to brown.
  • Turn the kebabs and brush with oil and sprinkle the remaining paprika.
  • Cook for another 6-8 minutes, keeping an eye on them after about 5 minutes. Once charred to your liking and the sausages are cooked through, serve them up!

Notes

  • Change up the vegetables to your family's preference or whatever you have to hand. Button mushrooms, zucchini/courgette slices, or just-tender potatoes work well. Haloumi is also a good option.
