1 onion
finely chopped
500g beef mince
salt
to taste
1 sweet potato
diced
1 cup frozen peas and corn
garlic salt
optional, to taste
pepper
to taste
2 cups beef stock

Instructions
- Heat oil in a large pan. Add finely chopped onion and cook until transparent.
- Add mince and a generous sprinkle of salt. Cook until the mince is browned.
- Add the diced sweet potatoes and stir for a few minutes.
- Add the peas and corn, and season with garlic salt (if using) and pepper.
- Add the beef stock to the pan – this should cover everything.
- Cook on low heat with the lid on, stirring periodically.
- Once the sweet potato is soft, taste and season accordingly before serving.
