Best chocolate cake

This really is the best chocolate cake ever it does not need icing and is a cross between a brownie and a cake everyone will be back for seconds

Ingredients

  • 125g butter

  • 200g brown sugar

  • 2 eggs

    separated

  • ½ cup milk

  • 250g flour

  • 1 1/2 baking soda

  • 1 tbsp warm water

  • 150g bittersweet chocolate

    try Whitakers Ghana Dark

  • ⅔ cup brown sugar

  • ½ cup milk

  • a few vanilla

  • 1 egg yolk

    lightly beaten

  • 1 24cm cake tin
  • 1 saucepan
  • 1 whisk

Instructions

  1. Preheat oven to 180ºC and grease a 24cm cake tin.
  2. Make the chocolate mixture first.
  3. Gently melt the chocolate with sugar, milk and vanilla in a saucepan.
  4. Add egg yolk and cook over gentle heat until mixture thickens slightly. Allow to cool.
  5. Cream the butter and sugar until pale and fluffy.
  6. Beat egg yolks lightly (reserve whites) and mix yolks with milk, then add to butter mixture alternately with flour.
  7. Add to the cooled chocolate mixture and combine well.
  8. Dissolve baking soda in warm water and stir into mixture.
  9. Whisk egg whites until creamy, then fold into mixture.
  10. Pour into prepared tin and bake for 50 – 60 minutes or until cake tests clean.
  11. Cool cake completely before cutting.

Tip
This cake does not require icing.
