Ingredients
6 ripe nectarines
deliciously ripe
2 cups oats
½ cup coconut
1 cup plain wholemeal flour
1 cup brown sugar
1 pinch spice mix
e.g., cinnamon
chopped nuts
such as hazelnuts, almonds, pecans etc.
softened butter
add until mixture is moist
Equipment
- 1 muffin tin
Instructions
- Use large nectarines, cut in half and remove stone.
- Place cut side up in a lightly greased muffin tin.
- Mix all dry crumble ingredients together (oats, coconut, flour, sugar, spice mix, nuts), then add softened butter until the mixture is moist.
- Sprinkle 2 cups of the crumble mixture onto the nectarines.
- Bake at 180C, checking the oven from 10 minutes until golden brown.
- Serve with ice cream and enjoy.
