Nectarine crumble

When there's a glut of nectarines, this is the recipe to turn to. Fresh fruit topped with a buttery, cinnamon crumble? Yes, please!

Ingredients

  • 6 ripe nectarines

    deliciously ripe

  • 2 cups oats

  • ½ cup coconut

  • 1 cup plain wholemeal flour

  • 1 cup brown sugar

  • 1 pinch spice mix

    e.g., cinnamon

  • chopped nuts

    such as hazelnuts, almonds, pecans etc.

  • softened butter

    add until mixture is moist

Equipment

  • 1 muffin tin

Instructions

  1. Use large nectarines, cut in half and remove stone.
  2. Place cut side up in a lightly greased muffin tin.
  3. Mix all dry crumble ingredients together (oats, coconut, flour, sugar, spice mix, nuts), then add softened butter until the mixture is moist.
  4. Sprinkle 2 cups of the crumble mixture onto the nectarines.
  5. Bake at 180C, checking the oven from 10 minutes until golden brown.
  6. Serve with ice cream and enjoy.

Tip
Part of the fun is presenting these in the muffin tray to the table so every one gets to choose the yummiest one.

Serve with ice cream.
Variation
This recipe would work well with all stone fruits.
Storage
The crumble mixture can be frozen to be used at a later stage.
