White chocolate and cranberry biscuits

These biscuits make a great Christmas gift for family and friends. Filled with lots of yummy white chocolate and cranberries you won't be able to stop at one!

Ingredients

  • 1 cup caster sugar

  • 125g butter

    melted

  • 1 cup plain flour

    gluten-free, see notes below

  • 1 cup self-raising flour

  • 1 egg

    lightly beaten

  • ½ cup white chocolate

    roughly chopped

  • ½ cup dried sweet cranberries

Equipment

  • 1 baking trays
  • 1 baking paper
  • 1 large bowl
  • 1 wire rack

Instructions

  1. Preheat oven to 190C. Line two baking trays with baking paper.
  2. Place sugar in a large bowl, melt butter and pour over sugar. Stir well, add remaining ingredients and stir to combine.
  3. Roll 2 tablespoonfuls of mixture into balls and place 3-4cm apart on trays, press down slightly.
  4. Bake 15 minutes until golden brown.
  5. Remove from oven, cool slightly before removing to a wire rack to cool completely.

Notes

Tip
This is a fabulous basic biscuit recipe, add whatever you like to the mix, but keep the same quantities.
Variation
To make these biscuits gluten-free, use gluten-free plain flour and 2 teaspoons of baking powder.
