Orange cake

This one-bowl cake recipe has a delicate citrus flavour which is enhanced by the orange icing. A pretty summery bake that's as delicious as it looks.

Ingredients

  • 125g butter

    softened

  • 1 cup caster sugar

  • 1 orange

    Zest and juice of

  • 3 eggs

  • 1 tbsp vanilla extract

  • 2 cups self-raising flour

  • 1 cup milk

  • 1 cup icing sugar

    For icing

  • 1 tbsp orange juice

    For icing

Equipment

  • 1 mixing bowl
  • 1 20cm square or round cake tin
  • 1 skewer
  • 1 cake tray
  • 1 food processor (optional)

Instructions

  1. Preheat oven to 180°C. Grease and line a 20cm square or round cake tin.
  2. Place all cake ingredients (butter, caster sugar, orange zest and juice, eggs, vanilla, flour, and milk) in a mixing bowl and beat on low speed until just combined.
  3. Increase speed and beat until smooth.
  4. Pour into prepared tin and bake for 40 minutes or until a skewer inserted into the centre of the cake comes out clean.
  5. Allow cake to cool for 5 minutes in the tin and then turn out onto a cake tray to cool completely.
  6. To make the icing, combine icing sugar and enough orange juice to make a smooth paste.
  7. Spread icing onto the cold cake.

Tip
This is a great, quick cake to make and is perfect for afternoon tea and for lunch boxes.
Tip
You will get a flatter cake using the square tin, but then it is easy to cut into squares for lunch boxes.
Tip
Can be mixed in a food processor.
Variation
Add some orange zest to the icing, but that depends on your children’s ‘bit’ tolerance.
