Peach crumble slice

This quick recipe turns a delicious peach crumble into a slice that’s perfect for lunch boxes and afternoon tea. Using dried fruit, you don’t have to wait for summer before you can enjoy the yummy flavour of this peach slice.

Ingredients

  • 90g unsalted butter

    melted

  • 1 cup plain flour

  • ⅓ cup caster sugar

  • 1 cup dried peaches

    finely chopped

  • 1 cup water

  • 1 cup caster sugar

  • ⅔ cup shredded coconut

  • 1 cup plain flour

  • 1 cup brown sugar

Equipment

  • 1 Rectangular slice pan
  • 1 Small bowl
  • 1 Small saucepan
  • 1 Oven

Instructions

  1. Preheat oven to 180°C. Grease and line a rectangular slice pan.
  2. In a small bowl, combine the plain flour, melted butter and sugar. Press the mixture evenly across the base of the prepared pan.
  3. Bake for 20 minutes or until lightly golden.
  4. While the base is baking, combine the diced fruit, water and sugar in a small saucepan. Bring to the boil then reduce to a simmer. Simmer for 10 minutes or until thick. Stir occasionally.
  5. Combine the remaining melted butter, coconut, flour and brown sugar in a small bowl.
  6. When the base comes out of the oven, cover the hot base evenly with the thickened fruit and then top with the coconut mixture.
  7. Return to the oven and bake for 20 minutes, or until the top is golden brown.

Variation
You could use any dried fruit you like – apricots, apple, pears.
