Super-quick creamy pork fillet

This is such an easy recipe, you can have it on the table in 10 minutes flat! Sliced pork fillet doesn't take long to pan fry and the mustard-flavoured sour cream sauce takes just a minute to heat through. Serve on a bed of rice sprinkled with craisins and parsley. Delicious!

Ingredients

  • 1 tbsp butter or oil

  • 800g pork fillet

    about 200g per person

  • 2 tbsp wholegrain mustard

  • 1 cup light sour cream

  • 1 cup craisins (dried cranberries)

    optional

  • 2 tbsp fresh flat-leaf parsley

    chopped

Equipment

  • 1 non-stick pan

Instructions

  1. Slice pork fillet into rounds about 5mm thick. Heat a non-stick pan over high heat.
  2. Melt butter in pan and fry pork for 2-3 minutes each side until golden brown. Stir in mustard and sour cream and cook for about a minute to heat through.
  3. Serve pork on a bed of steamed rice, sprinkled with cranberries (if using) and parsley.
