Pumpkin fritters

A great way to use up left over pumpkin from a Sunday roast, these sweet and savoury pumpkin fritters are a great afternoon tea treat. Sprinkle with cinnamon sugar for a taste that's hard to beat!

Ingredients

  • 2 cups pumpkin

    cooked and mashed

  • 1/4 salt

  • 2 tbsp flour

  • 1 egg

    beaten

  • 1 baking powder

  • butter or oil

    for frying

  • 1 cup sugar

    for cinnamon sugar topping

  • 1 tsp ground cinnamon

    for cinnamon sugar topping

Equipment

  • 1 frying pan
  • 1 mixing bowl

Instructions

  1. Mix pumpkin, egg, flour, baking powder and salt together.
  2. Heat butter in a frying pan and drop in spoonfuls of mixture.
  3. Fry on both sides until golden.
  4. Serve hot.
  5. Sprinkle with cinnamon sugar.
