Tuna patties

Tuna patties are a great budget dinner option that the whole family can enjoy. With a crunchy exterior, these patties are made of tuna, potato and diced vegetables and are delicious served with a green salad.

Ingredients

  • 500g new potatoes

    skin on

  • 185g tuna

    in a tin, drained

  • 1 egg

  • ½ cup carrot

    grated

  • ½ cup zucchini

    grated (corn also good)

  • ½ cup tasty cheese

  • ½ cup wholemeal flour

  • 3 tbsp canola oil

Equipment

  • 1 saucepan
  • 1 potato masher
  • 1 large mixing bowl
  • 1 large frying pan

Instructions

  1. Cut potatoes into quarters, put in a saucepan with cold salted water and bring to the boil. Once soft, drain water and mash potatoes with the skin on.
  2. In a large mixing bowl add remaining ingredients except the oil.
  3. Add potato mash to tuna mixture, season with salt and pepper then fold ingredients together until well combined.
  4. Shape patties using your hands – I use a cup measurement for each patty.
  5. Heat a large frying pan; add oil and once heated, place the patties in the oil and fry until golden brown.
  6. Cook the patties in several batches for best results.

Notes

Tip
I like to leave the skin on new potatoes because it is so thin and holds all the nutrients- and my kids never notice.
Variation
For variety, mix up your veggies. If your child loves sweet potato, make a potato/ sweet potato mash for something different.
