Orange and oatbran muffins

Muffins only take a few minutes to prepare and make me feel virtuous when I pop them, instead of processed treats, into my kids’ lunch boxes.

Ingredients

  • 60g melted butter

  • ¾ cup brown sugar

  • 2 eggs

  • 2 oranges

    juiced

  • 1 orange

    rind grated

  • 1 cup self-raising flour

  • 1 cup oat bran

Equipment

  • 1 oven
  • 1 muffin pan
  • 1 paper cases
  • 1 mixing bowl

Instructions

  1. Preheat oven to 180°C.
  2. Line 12-hole muffin/cupcake pan with paper cases.
  3. Mix butter, sugar, eggs, juice and rind together.
  4. Gently stir in flour and oat bran until just combined.
  5. Spoon into paper cases.
  6. Bake until golden, around 20-25 minutes.
