Ingredients
60g melted butter
¾ cup brown sugar
2 eggs
2 oranges
juiced
1 orange
rind grated
1 cup self-raising flour
1 cup oat bran
Equipment
- 1 oven
- 1 muffin pan
- 1 paper cases
- 1 mixing bowl
Instructions
- Preheat oven to 180°C.
- Line 12-hole muffin/cupcake pan with paper cases.
- Mix butter, sugar, eggs, juice and rind together.
- Gently stir in flour and oat bran until just combined.
- Spoon into paper cases.
- Bake until golden, around 20-25 minutes.
