Beetroot and potato puree

Tasty, colourful and filled with goodness, this dip is great for babies or as a dip for toddlers. Also a great afternoon snack for the whole family when served with pita bread, carrots, celery or crackers.

Ingredients

  • 1 beetroot

  • 1 potato

Equipment

  • 1 pot
  • 1 saucepan
  • 1 skewer
  • 1 blender
  • 1 microwave-safe container
  • 1 plastic wrap

Instructions

  1. Wash the beetroot well and place in a pot of boiling water. Cook until soft, around 30 minutes. Beetroot is cooked when a skewer slides in easily.
  2. Peel and dice potatoes and place in a small saucepan of boiling water. Cook until soft, around 10 minutes.
  3. Peel or scrub away beetroot skin; it should come away easily.
  4. Strain potatoes, reserving a little bit of water if required and place in a blender with the beetroot.
  5. Puree until smooth.
  6. Pierce the beetroot and place in a microwave-safe container with 2 tbsp of water.
  7. Cook on HIGH for 6 minutes, rearrange, and cook for another 6 minutes or until soft.
  8. Peel and dice the potatoes and place in a microwave-safe container. Cover with plastic wrap, leaving a corner uncovered to allow steam to escape. Cook for around 4 minutes or until soft.
  9. Peel or scrub away beetroot skin; it should come away easily.
  10. Place beetroot and potato in a blender and puree until smooth.

Notes

Tip
Beetroot has a lot of staying power so don’t be shocked if your baby’s poo is scarlet the day after eating this brightly coloured puree!
Storage
Can be frozen for up to six weeks.
