Beetroot Cookies

Beetroot cookies look gorgeous and taste even better.

Ingredients

  • 125g butter

    softened

  • ¾ cup sugar

  • 1 tsp vanilla essence

  • 1 egg

  • 2 cups standard plain flour

  • 1 tsp baking powder

  • 1/2 LeaderBrand Pure’n Ezy Beetroot

    pureed

  • 1 cup chocolate chips

Equipment

  • 1 oven
  • 1 oven tray
  • 1 fork

Instructions

  1. Preheat oven to 190°C. Cream butter, sugar and vanilla together until light and fluffy. Add egg, beating well.
  2. Sift flour and baking powder together and combine with creamed mixture. Add chocolate chips, pureed LeaderBrand Pure’n Ezy beetroot and mix.
  3. Roll heaped teaspoonsfuls of mixture into balls and place on an oven tray. Flatten slightly with a floured fork.
  4. Bake for about 12 minutes.
