Carrot walnut loaf

Carrot and walnuts are a classic combo and taste terrific when baked together into a bread. Try this easy loaf that's a healthy choice with only half a cup of sugar added. Perfect for afternoon tea after a busy day.

Ingredients

  • 1 cup self-raising flour

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • ½ cup milk

  • ½ cup brown sugar

  • 2 eggs

  • 125g butter

    melted

  • 1 cup carrot

    grated

  • ½ cup walnuts

Equipment

  • 1 medium mixing bowl
  • 1 loaf pan
  • 1 skewer

Instructions

  1. Preheat oven to 180C.
  2. Sift flour, cinnamon and baking powder into medium mixing bowl.
  3. Add brown sugar, carrot, walnuts, eggs and milk, mix until well combined.
  4. Lastly, add melted butter.
  5. Pour into greased loaf pan and bake for 45 minutes, do clean skewer test to check it’s done.

Try to use sweet carrots in this Carrot walnut loaf recipe as it makes the resulting loaf extra sweet.

This recipe is super-quick and easy to make.
Variation
If your kids go to a no-nuts school, you may have to leave out the walnuts.
Storage
This loaf freezes really well.
