Chicken parcels

These delicious chicken parcels are perfect for the lunchbox or a picnic or a quick after school snack. The kids and grown ups will love them

Ingredients

  • 1 cup jasmine rice

  • 0.5 BBQ chicken

    diced

  • ½ cup cream

  • 250g bacon

    diced and cooked

  • 1 cup tasty cheese

    grated

  • Salt and pepper

  • 2 pre-rolled shortcrust pastry

  • 1 egg

    lightly beaten

Equipment

  • 1 Oven
  • 1 Large bowl
  • 1 Knife

Instructions

  1. Cook rice as per directions on packet.
  2. Preheat oven to 200C. In a large bowl add rice, diced chicken, cream, bacon, cheese, salt and pepper and mix well.
  3. Cut the pastry sheets in half, diagonally. Spoon mixture evenly onto each pastry half, and then brush edges with egg and press together into a triangle shape.
  4. Flute edges if desired.
  5. Brush each parcel with egg and cut slits with a knife.
  6. Cook for 15-20 minutes until golden brown.

Notes

Tip
These are delicious dipped in a little tomato sauce.
Variation
If you dont want to use BBQ chicken, you can cook and then dice two chicken breasts.
