500g mince
3 slices shredded bread

¼ cup onion
diced
1 carrot
grated
1 zucchini
grated
mushrooms
finely chopped
1 egg
beaten
1 tsp beef stock
3 tbsp lemon juice
½ cup tomato sauce
⅓ cup brown sugar
1 tbsp lemon juice
1 tsp dry mustard

- 1 loaf tin
- 1 food processor
Instructions
- Preheat oven to 180 degrees C.
- Combine sauce ingredients (tomato sauce, brown sugar, 1 tbs lemon juice, dry mustard) and mix well until there are no lumps.
- Mix mince and other ingredients (shredded bread, onion, carrot, zucchini, mushrooms, egg, beef stock, 3 tbs lemon juice) and combine well.
- Place the meat mixture into a loaf tin and bake for about 1 hour. Pour off any excess fat.
- Pour the prepared sauce over the meatloaf and bake for an extra 10 minutes.
