Peanut brittle

Make this peanut brittle in minutes and serve as a sweet treat at a party or put in a pretty jar and give to a friend as a gift. Either way, it's a winner!

Ingredients

  • 1 cup sugar

  • 1 cup light corn syrup

  • 1 cup raw peanuts

  • 1 unsalted butter

    plus extra for greasing

  • 1 tbsp vanilla extract

  • 1 bicarbonate soda

Equipment

  • 1 baking sheet
  • 1 heat-proof glass bowl
  • 1 microwave
  • 1 meat mallet or hammer

Instructions

  1. Butter a baking sheet with 1 teaspoon butter and set aside.
  2. In a heat-proof glass bowl, combine sugar and corn syrup and microwave on high for 4 minutes.
  3. Stir in peanuts and microwave for another 4 minutes.
  4. Add butter, vanilla, and stir. Microwave the mixture on high for another 2 minutes.
  5. Remove and add bicarbonate soda, stir until thoroughly combined.
  6. Pour mixture into prepared baking sheet and allow it to cool completely.
  7. Break up and serve or store in an air-tight container for up to 2 weeks.

Notes

Tip
Corn syrup is available in most big supermarkets – look in the baking, health food and/or toppings sections. If you can’t find it, you could substitute glucose syrup in this recipe.
Tip
Don’t be tempted to use dry-roasted peanuts in this recipe – the brittle is far better with raw peanuts.
Tip
Have fun break up the Peanut Brittle using a little meat mallet or hammer.
Storage
Store in an air-tight container for up to 2 weeks.
