Baby guacamole

Tasty enough to eat by itself, this guacamole is also lovely as a dip for the older kids.

Ingredients

  • 1/2 ripe avocado

  • 1/4 tomato

  • 1 tbsp olive oil

    1. Cut and deseed the avocado and mash in a bowl.
    2. Sautee tomatoes in the olive oil over medium heat until soft and sauce-like.
    3. Puree the tomato and stir through the avocado.

    Notes

    Tip
    Tomatoes are an allergenic food and can be a little acidic when not cooked. Be sure to watch baby closely for signs of an allergic reaction – redness around the mouth, itching and rashes.
    Storage
    Avocado goes brown quickly and doesn’t freeze at all so this is best eaten straight away.
