Pineapple and Carrot Cake

So simple to make, this sweet moist pineapple and carrot cake is sure to become a family favorite.

Ingredients

  • 1 cup pineapple

    finely chopped

  • 1½ cups carrot

    grated

  • ¾ cup wholemeal flour

  • ¾ cup flour

  • ½ tbsp baking powder

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1 cup raw sugar

  • 3 eggs

  • ½ cup oil

  • ¼ cup pecan nuts or walnuts

    chopped

Equipment

  • 1 oven
  • 1 20 cm round cake tin
  • 1 baking paper
  • 1 large bowl
  • 1 cake tester

Instructions

  1. Preheat the oven to 180 degrees celcisu. Line a 20 cm round cake tin with baking paper.
  2. Combine all the ingredients in a large bowl and mix well. Pour the batter into the tin.
  3. Bake in the preheated oven for 1 hour or until a cake tester inserted into the centre of the cake comes out clean. Cool.
  4. Serve with extra pineapple slices and yoghurt.
