Ingredients
1 strawberries
rinsed, topped and halved
1 tbsp raw caster sugar
1 large orange
peeled and diced, seeds removed
6 dates
1 tsp vanilla extract
Equipment
- 1 Plastic popsicle moulds
- 1 Shallow container
- 1 Saucepan
- 1 Blender
Instructions
- Put strawberries into a shallow container and sprinkle with the raw caster sugar. Leave the strawberries to macerate for 30 minutes.
- Place macerated strawberries along with the orange, dates and vanilla into a saucepan over medium heat, and stir until gently bubbling. Turn the heat down to low and allow the mixture to stew for 10 minutes.
- Take off the heat and set aside to cool for another 10 minutes.
- Transfer mixture to a blender and blend well.
- Pour evenly into popsicle moulds and freeze overnight, or until set.
