Glazed meatloaf

This delicious meatloaf is a perfect family staple as you can make it and serve it later or prepare it and bake it when you are ready. There are some hidden veggies in there along with a delicious glaze that will have them coming back for more.

Ingredients

  • 500g mince

  • 3 slices shredded bread

    Can be processed with the onion.

  • ¼ cup onion

    diced

  • 1 carrot

    grated

  • 1 zucchini

    grated

  • mushrooms

    finely chopped

  • 1 egg

    beaten

  • 1 tsp beef stock

  • 3 tbsp lemon juice

  • ½ cup tomato sauce

  • ⅓ cup brown sugar

  • 1 tbsp lemon juice

  • 1 tsp dry mustard

  • 1 loaf tin
  • 1 food processor

Instructions

  1. Preheat oven to 180 degrees C.
  2. Combine sauce ingredients (tomato sauce, brown sugar, 1 tbs lemon juice, dry mustard) and mix well until there are no lumps.
  3. Mix mince and other ingredients (shredded bread, onion, carrot, zucchini, mushrooms, egg, beef stock, 3 tbs lemon juice) and combine well.
  4. Place the meat mixture into a loaf tin and bake for about 1 hour. Pour off any excess fat.
  5. Pour the prepared sauce over the meatloaf and bake for an extra 10 minutes.

Notes

Tip
Serve with mashed sweet potato or normal potato, corn, and other veggies.
