Honey sesame lamb

Using a lamb mini roast, this recipe for honey sesame lamb is a very delicious option for your evening meal. Slice up the leftovers and serve on sandwiches for lunch the next day.

Ingredients

  • 800g lamb mini-roast

  • 1/2 tbsp mustard

  • Salt and pepper

    to taste

  • 2 oranges

    juiced

  • 1 tsp honey

  • sesame seeds

    for sprinkling

Equipment

  • 1 oven
  • 1 roasting pan

Instructions

  1. Heat oven to 200°C. Rub lamb with mustard, salt and pepper.
  2. Place in oven for about 10 mins.
  3. Mix orange juice with honey together.
  4. Remove from oven and pour the orange juice mixture over the lamb and the base of the pan.
  5. Sprinkle the lamb with sesame seeds and return to the oven, turning it down to 180°C.
  6. Roast for approx. 15 mins for medium rare, or longer if you prefer.
  7. Rest for at least 5 mins before cutting and serving.

Notes

Tip
If the honey is firm and hard to mix with the juice, zap it in the microwave for 10-20 seconds first.
Tip
Sprinkle more sesame seeds over the meat before you serve for a little extra crunch.
Variation
This is wonderful the next day cold in sandwiches or wraps with yoghurt and cucumbers.
