Fruit and oat squares

This recipe for fruit and oat squares makes up a delicious slice that's perfect for lunchboxes, after-school snacks or to serve up at your school's cake stall. Substitute the apricot for chocolate if you want to make them a little bit naughty.

Ingredients

  • 1 cup rolled oats

  • 1 cup desiccated coconut

  • 1 cup brown sugar

  • 1 cup plain flour

  • ½ cup sultanas

  • ½ cup apricots

    chopped

  • 125g unsalted butter

  • 2 tbsp water

  • 2 tbsp golden syrup

  • 1 tsp bicarb soda

Equipment

  • 1 lamington tray (24cm x 29cm)
  • 1 large bowl
  • 1 small saucepan

Instructions

  1. Preheat oven to 180°C and butter a lamington tray (24cm x 29cm). Combine all dry ingredients in a large bowl.
  2. In a small saucepan combine butter, water and golden syrup, warm over a low heat until butter has melted.
  3. Add bicarb soda and pour into dry ingredients.
  4. Mix until well combined. Press into prepared tray and cook for 10-15 minutes until golden.

Notes

Tip
The hot butter mixture melts the chocolate to give that wonderful colour.
Tip
Wet your finger tips with water to stop the mixture sticking to your hands when you press it into the tray.
Variation
You can substitute the apricots with ½ cup chopped chocolate.
