Hollywood starlet birthday cake

This simple, yet stylish, birthday cakes uses packet mixes for the cake itself (or ready made if you want to save time), topped with chocolate butter cream and decorated with stars and the Hollywood sign cut out of fondant. Too easy.

Ingredients

  • 4 cake mixes

    or equivalent cake recipe of choice to fill two 28cm x 23cm rectangular cake tins

  • 1 Buttercream icing

  • 1 Chocolate butter

    Meadow Lea or see Bouncing balls birthday cake for recipe

  • 200g white ready-to-roll fondant icing

  • Gold cachous

  • Yellow food colouring

  • 1 two 28cm x 23cm rectangular cake tins
  • 1 knife
  • 1 Star cookie cutters
  • 1 Alphabet cookie cutters
  • 1 tray
  • 1 baking paper
  • 1 rolling pin
  • 1 Doll
  • 1 Red ribbon

Instructions

  1. Following the packet instructions, prepare two packet cakes and pour together into one 28cm x 23cm rectangular cake tin. Bake according to the instructions – you may have to increase your cooking time slightly as you have doubled the recipe.
  2. Repeat with the remaining packet cakes to create a second cake.
  3. Level both cakes with a knife and spread the top of one cake with the Chocolate butter. Sandwich the remaining cake on top.
  4. Ice the entire cake with buttercream.
  5. To begin the decorations, knead fondant until soft and smooth.
  6. Dust a work bench with icing sugar and roll out fondant to approx. 5mm thickness. Using the star cutters, cut out the desired number of stars. Using the alphabet cutters, cut out the word 'Hollywood'.
  7. Press gold cachous on the star tips. Place stars and letters on a tray lined with baking paper and allow to dry and harden (this may take 24-48 hours).
  8. When the stars are dry, paint them with yellow food colouring and allow to dry. This will give a strong, vibrant colour.
  9. Position the red ribbon down the middle of the cake, leaving a space at the back for the 'Hollywood' letters. This provides a centre to work from.
  10. Position the 'Hollywood' letters at the back of the cake (you can curve this if the letters do not fit across the cake in a straight line).
  11. Position the stars at the front of the cake. Poke the feet of the doll on either side of the ribbon so it looks like it is walking down the red carpet.
  12. Carefully press gold cachous around the edges of the cake. This takes time but adds Hollywood glamour.

Notes

Tip
If you don’t have alphabet cutters, you can create the lettering on a computer to use as a template on the fondant icing. Use a sharp knife to cut around the templates.
Tip
You can mix a splash of vodka with the yellow food colouring. This helps it to dry quicker.
Tip
Make the stars and Hollywood letters a couple of days before you need the cake to ensure they are completely dry.
Variation
If you don’t wish to use packet cakes, any other cake is suitable. Adjust your recipe to suit the tin being used.
Storage
Store the dried fondant decorations in an airtight container until ready to use.
