Easy five cup loaf

This 5 cup loaf is easy and can be made from ingredients in your pantry. It's a great fallback recipe for when you are out of eggs. Make and slice it for lunch box treats, or just pop it in the oven for afternoon tea.

Ingredients

  • 1 cup self-raising flour

  • 1 cup brown sugar

  • 1 cup dessicated coconut

  • 1 cup sultanas

  • 1 cup milk

  • 1 loaf tin
  • 1 baking paper
  • 1 bowl

Instructions

  1. Pre-heat oven to 180°C. Line a loaf tin with baking paper and set aside.
  2. Mix all ingredients in a bowl.
  3. Pour into lined tin.
  4. Bake for 40-45 mins until cake springs back when lightly touched in the centre.

This is a favourite for lunch box treats at my place.

Make sure you don’t let it stand before it goes into the oven or all the sultanas will sink to the bottom.
