Free form apple pie

No need to fiddle about with homemade pastry lids for this apple pie! Use a shortcut with ready made frozen pastry, pile on the apples and then fold the edges over to make a deliciously untidy pie. Serve hot with ice cream.

Ingredients

  • 2 frozen sweet shortcrust pastry

  • 3 small red apples

    Pink Ladies are my favourite

  • 4 tbsp almond meal

  • 1 tsp cinnamon

  • 2 caster sugar

  • Thick cream or icecream

    to serve

  • 1 oven

Instructions

  1. Preheat oven to 180°C.
  2. Remove pastry sheets from freezer and lay on a bench to defrost.
  3. Quarter and core apples, then thinly slice each quarter.
  4. Sprinkle 2 tablespoons almond meal on each pastry sheet, leaving a 5cm border.
  5. Pile on apples, sprinkle with cinnamon and sugar.
  6. Fold up edges of pastry, doesn’t matter if it looks messy, that’s the whole idea.
  7. Bake for 25-30 minutes until pastry is crisp, apples are tender and there is a fantastic aroma drifting through the house!
  8. Serve hot with cream or icecream.

Notes

Tip
Make sure you get sweet shortcrust pastry, I have made this pie with unsweetened pastry, but it’s just not quite right.

Variation
You could always make your own pastry, if time permits.
Storage
Leftovers can be kept covered in the fridge and reheated the next night at about 150°C.
