Healthy nachos

If you think my healthy corn chips are good then you are going to LOVE this healthy nachos recipe. All you need is some fresh salsa and light cheese and you have a winning dish.

Ingredients

  • 1 healthy corn chips

    from recipe

  • 1 cup low-fat cheddar cheese

    (100g)

  • 200g black beans or red kidney beans

    drained and rinsed

  • ¾ cup medium avocado

    sliced (100g)

  • ¼ cup low-fat sour cream

  • 2 large tomatoes

    chopped (350g), for fresh salsa

  • 1/2 green capsicum

    chopped (50g), for fresh salsa

  • 1/2 red capsicum

    chopped (50g), for fresh salsa

  • 1/2 small red onion

    chopped (40g), for fresh salsa

  • ¼ cup coriander leaves

    chopped, for fresh salsa

  • 2 tsp red wine vinegar

    for fresh salsa

  • ½ tsp sugar

    for fresh salsa

  • to taste salt and pepper

    for fresh salsa

Equipment

  • 1 Ovenproof plates
  • 1 Grill
  • 1 Bowl
  • 1 Knife
  • 1 Cutting board

Instructions

  1. Mix all salsa ingredients together and set aside.
  2. Heat grill to hot. Make sure your plates are ovenproof.
  3. Place a layer of tortilla chips on a plate, add a light sprinkling of cheese, followed by beans and some salsa. Continue to layer.
  4. Place in the oven and grill for 2-3 minutes until cheese is melted and golden.
  5. Serve with a dollop of salsa, slices of avocado and a little light sour cream.

Notes

Tip
You can choose to make individual servings of this recipe or make a large plate to share.
Variation
Olive slices and a little Tabasco in the salsa will give this an adult flavour.
