Mulberry pancakes

These light and delicious pancakes use mulberry fromage frais in their mix and are topped with a dollop of the same! Fruity, creamy and a perfect way to start the day.

Ingredients

  • 1 cup self-raising flour

  • 1 tbsp castor sugar

  • 125g Mulberry fromage frais

  • 1 egg

  • ½ cup low fat milk

  • 30g polyunsaturated margarine

    melted

  • 125g Mulberry fromage frais

    extra

  • 1 bowl
  • 1 whisk
  • 1 non-stick frying pan

Instructions

  1. Sift the flour into a bowl, stir in the sugar.
  2. Whisk the fromage frais, egg and milk together, add to the flour with the margarine, stir until smooth.
  3. Heat a lightly greased non-stick frying pan to medium-low.
  4. Spoon a tablespoon of the mixture into the pan, cook for 1 minute on each side or until golden brown.
  5. Repeat with the remaining mixture (you can cook more than 1 at a time).
  6. Serve warm or cold topped with the extra fromage frais.
