Shortbread

Shortbread is a traditional Christmas biscuit recipe but it can also be enjoyed all through the year. The light sweet biscuit dough results in a pale biscuit that's perfect with a cup of tea.

Ingredients

  • 300g butter

    softened

  • 1 cup icing sugar

  • 3 cups plain flour

  • 1/2 glace cherries

    optional

Equipment

  • 1 Plastic wrap
  • 1 Baking tray
  • 1 Baking paper
  • 1 Rolling pin

Instructions

  1. Cream butter and icing sugar. Add flour, mix well, chop cherries in half and add to mixture.
  2. Wrap in plastic wrap and place in fridge for 1/2 hour.
  3. Roll out and either make shapes or shape into a log and cut into slices.
  4. Line baking tray with baking paper, place shapes/rounds on tray.
  5. Bake 180ºC for 15 mins or until pale golden. Be careful not to overcook.
