Slow cooker stuffed potatoes

These yummy potatoes are a great way to cook your spuds without heating up the kitchen. You can pop these in the slow cooker early in the day and have dinner ready in 10 minutes by just adding your topping.

Ingredients

  • large washed potatoes

    one per person or two if you are really hungry

  • topping of your choice

    such as baked beans, chives and sour cream, cooked chorizo sausage or bacon, grated cheese, bolognese sauce or savoury mince

Equipment

  • 1 slow cooker
  • 1 foil

Instructions

  1. Wash potatoes and dry thoroughly.
  2. Wrap each potato individually in foil and make sure it is tightly sealed.
  3. Place into the base of slow cooker, cover and cook on low for 8 hours or 5-6 hours on high.
  4. When cooked, remove from slow cooker and unwrap. Add your favourite topping.
