Spicy pear crumble

If you love apple crumble, you'll love this twist on the classic that includes ginger and cinnamon along with pear.

Ingredients

  • 5 ripe pears

  • 2 tsp lemon juice

  • ½ tsp vanilla extract

  • ½ tbsp cornflour

  • 2 tbsp brown sugar

  • ⅓ cup wholemeal flour

    For topping

  • ½ cup rolled oats

    For topping

  • 2 tbsp brown sugar

    For topping

  • 6 ginger biscuits

    For topping

  • 1 pinch cinnamon

    For topping

  • 50g butter

    melted, for topping

Equipment

  • 1 Oven
  • 1 Bowl
  • 1 Food processor
  • 1 Baking dish

Instructions

  1. Heat oven to 190°C (170°C fan-forced).
  2. Peel pears, cut in half, remove cores and dice.
  3. Combine lemon juice, vanilla extract, cornflour and sugar with pears in a bowl.
  4. Pulse dry topping ingredients (wholemeal flour, rolled oats, brown sugar, ginger biscuits, cinnamon) in a food processor until finely chopped. Add melted butter and pulse once more.
  5. Pour pears into a baking dish. Top with crumble mixture and bake for approx 20 minutes, until crispy.
  6. Serve with ice-cream.

Notes

Tip
The cornflour will thicken up the pear juices as the crumble cooks.
Tip
Plain yoghurt is also a great accompaniment with this dessert.
