Tomato glazed meatloaf



  • 500g sausage mince
  • 1 cup breadcrumbs
  • 1 small onion, diced
  • 1 carrot, grated
  • 1 cup zucchini, grated
  • 2 tbsp tomato sauce
  • 2 tbsp Italian herbs
  • 1 egg lightly beaten


Tomato glaze

  • ½ cup tomato sauce
  • 1/2 cup Worcestershire sauce


Preheat oven to 180ºC. Line a tray with baking paper.

Mix all ingredients except for the glaze.

Form a loaf and bake for 30 mins. Drain excess fat.

Mix glaze ingredients together and spoon sauce mix over top and return to oven.

Cook further 10 minutes until top is glazed.

Stand for 10 mins. Slice and serve with creamy mashed potatoes and seasonal vegetables.
