Welsh Rarebit

Welsh rarebit is basically a creamy, cheesy sauce on toast that you then grill

Ingredients

  • 1 tbsp butter

  • 1 tbsp plain flour

  • ⅓ cup beer

    optional; 80mL

  • 1 tbsp dry mustard powder

  • 2 cups strong cheddar cheese

    grated

  • 1 egg

  • 4 slices crusty bread

    thick slices

  • chives

    to garnish

  • 1 saucepan
  • 1 grill
  • 1 toaster

Instructions

  1. Melt the butter in a saucepan, then add flour and cook over low heat, stirring, for 1 minute.
  2. Add beer (if using), mustard and cheese, and stir until creamy, but don’t boil.
  3. Remove from heat, add egg and stir until well combined.
  4. Toast bread slices, evenly spread with cheese mixture, and place under a grill until hot and bubbling.
  5. Garnish with chives.

Tip
Stir constantly to ensure a smooth, creamy texture.
Variation
Add chopped ham, chicken, tomatoes, or corn.
