Banana-oat cookies

Soft, chewy cookies made moist with bananas and oats for a sweet treat idea or a lunch box snack. Bake a double batch and freeze the leftovers - if there are any!

Ingredients

  • 1 cup sugar

  • ½ cup butter

  • 1 egg

  • 1 cup bananas

    mashed

  • 1½ cups quick cooking oats

  • 1½ cups flour

  • 0.5 salt

  • 0.5 tsp cinnamon

  • 0.5 baking soda

  • ½ cup walnuts

    chopped

  • 1 oven
  • 1 cooking tray
  • 1 baking paper
  • 1 cookie sheet

Instructions

  1. Preheat oven to 180C. Grease cooking tray or line with baking paper.
  2. Cream together butter, sugar and egg until light and fluffy. Stir in bananas and oats.
  3. Combine remaining dry ingredients and nuts and add to creamed mixture, blending well.
  4. Drop by teaspoonfuls onto greased cookie sheet and bake for 15-20 minutes.
  5. Allow to cool slightly before serving.
