Double chocolate biscuits

Calling all chocoholics! These double chocolate chip biscuits are jam-packed with melted chocolate and yummy chocolate pieces - you won’t be able to stop at just one!

Ingredients

  • 1 cup brown sugar

  • 125g butter

    melted

  • 1 tbsp vanilla extract

  • 1 cup plain flour

  • 1 cup self-raising flour

  • 1 egg

    lightly beaten

  • ½ cup white chocolate

    roughly chopped

  • ½ cup good quality dark chocolate

    roughly chopped

  • 1 large bowl
  • 1 baking trays
  • 1 baking paper
  • 1 wire rack

Instructions

  1. Preheat oven to 190C.
  2. Line two baking trays with baking paper.
  3. Place sugar in a large bowl, melt butter and pour over sugar.
  4. Stir well, add remaining ingredients and stir to combine.
  5. Roll tablespoonfuls of mixture into balls and place 3-4cm apart on trays, press down slightly.
  6. Bake until golden brown.
  7. Remove from oven, cool slightly before removing to a wire rack to cool completely.

Notes

Tip
These are sensational! Using good quality dark chocolate is the key.
Variation
This is a great basic biscuit recipe; substitute chocolate with apricots, almonds, sultanas or whatever takes your fancy.
