Easy chocolate choc chip cookies

These choc chip cookies are quick and easy to bake. Make a batch on the weekend for a tasty lunchbox treat for the kids.

Ingredients

  • 125g butter

  • 1 tbsp vanilla extract

  • 1 cup brown sugar

  • 1 egg

  • 1 cup plain flour

  • ¼ cup self raising flour

  • 1/2 bicarbonate of soda

  • ⅓ cup cocoa powder

  • ⅔ cup M&M’s/Chocolate chips

  • 1 oven trays
  • 1 electric mixer
  • 1 small bowl
  • 1 large bowl
  • 1 wire rack

Instructions

  1. Preheat the oven to moderate. Lightly grease two oven trays
  2. Beat butter, vanilla extract, brown sugar and egg in a small bowl with an electric mixer until smooth. Transfer to a larger bowl.
  3. Sift together plain flour, self-raising flour, bicarbonate of soda and cocoa powder and pour into large bowl and mix.
  4. Drop level tablespoons of the mixture onto the trays, leaving 5cm between each cookie. Add on M&M’s or/and chocolate chips.
  5. Bake uncovered in moderate oven for about 10 mins. Stand cookies for 5 minutes then tranfer to a wire rack to cool.
