Oat date and honey muffins

A great option for your child's lunchbox, these oat, date and honey muffins are sure to be a hit. Make a batch on the weekend!

Ingredients

  • 1 cup self-raising flour

  • 1 tsp baking powder

  • 1 cup rolled oats

  • ⅓ cup castor sugar

  • 1 cup dried dates

    roughly chopped

  • 150ml vegetable oil

  • 1 egg

    lightly beaten

  • ½ cup milk

  • 3 tbsp honey

  • 1 12-hole muffin tin
  • 1 Baking paper
  • 1 Mixing bowls
  • 1 Sifter
  • 1 Whisk

Instructions

  1. Preheat oven to 180ºC (350ºF).
  2. Lightly grease and line a 12-hole (1/3 cup capacity) muffin tin with non-stick baking paper.
  3. Sift together flour and baking powder into a large bowl, then add the sugar, oats, and dates.
  4. In a separate medium bowl, whisk together the oil, egg, milk, and honey.
  5. Fold the wet ingredients into the dry flour mixture and mix until just combined.
  6. Spoon the batter into the prepared tin.
  7. Sprinkle evenly with reserved oats.
  8. Bake for 15-18 minutes or until golden and firm to the touch.
