1 cup self-raising flour
1 tsp baking powder
1 cup rolled oats
⅓ cup castor sugar
1 cup dried dates
roughly chopped
150ml vegetable oil
1 egg
lightly beaten
½ cup milk
3 tbsp honey

Instructions
- Preheat oven to 180ºC (350ºF).
- Lightly grease and line a 12-hole (1/3 cup capacity) muffin tin with non-stick baking paper.
- Sift together flour and baking powder into a large bowl, then add the sugar, oats, and dates.
- In a separate medium bowl, whisk together the oil, egg, milk, and honey.
- Fold the wet ingredients into the dry flour mixture and mix until just combined.
- Spoon the batter into the prepared tin.
- Sprinkle evenly with reserved oats.
- Bake for 15-18 minutes or until golden and firm to the touch.
