Tomato basil pizza

This light pizza has the classic Italian flavours of tomato, basil and mozzarella but with half the calories. Buon appetito!

Ingredients

  • 1 x pizza base

    can use 2-ingredient dough

  • olive oil

    for coating the base

  • salt and pepper

    seasoning

  • 1 clove garlic

    minced

  • 1 cup mozzarella cheese

    grated part-skim or light

  • 2-3 whole vine ripened tomatoes

    coarsely chopped (or 8-10 cherry tomatoes, halved)

  • 1 cup black olives

  • 1 tbsp parmesan cheese

    or any other sharp cheese, grated

  • 3 cups fresh basil

    roughly chopped

  • 1 Oven
  • 1 Baking tray
  • 1 Cheese grater
  • 1 Knife

Instructions

  1. Heat oven to 240°C or 220°C fan-forced.
  2. Spray pizza base with oil, smoosh with garlic and season with salt and pepper.
  3. Add mozzarella and top with fresh tomatoes and olives. Sprinkle over parmesan and bake for 15 minutes or so.
  4. Remove from oven and top with basil.

Notes

Tip
Pizzas are generally high in fat due to 3 types of cheese; use light versions to manage this.
