Ingredients
200g butter
softened
½ cup caster sugar
1 egg yolk
¼ cup baking cocoa
1 cup plain flour
¾ cup White Chocolate Melts
for icing
2 tbsp cream
for icing
Equipment
- 1 oven trays
- 1 baking paper
- 1 electric mixer
- 1 mixing bowl
- 1 sifter
- 1 plastic wrap
- 1 rolling pin
- 1 medium-size star cutter
- 1 wire racks
Instructions
- Preheat oven to 180C. Line 2 oven trays with baking paper.
- Beat butter and sugar together until light and creamy. Add egg yolk.
- Sift baking cocoa and flour and stir into mixture. Knead mixture lightly, shape into a ball then wrap in plastic wrap and refrigerate for 20 minutes.
- Roll out between sheets of baking paper and cut out stars with a medium-size star cutter.
- Place on oven trays and bake for 12 minutes.
- Cool on tray for 5 minutes before transferring to wire racks to cool completely.
- To make the icing, melt the White Chocolate Melts with the cream in a small bowl over simmering water or in the microwave until smooth. Allow to cool slightly.
- Once the cookies are completely cool, spread a small amount of icing on the flat side of one cookie and sandwich it with another.
