White Chocolate Star Cookies

Perfect for every occasion, these pretty chocolate star biscuits are sandwiched together with a delicious combination of white chocolate and cream.

Ingredients

  • 200g butter

    softened

  • ½ cup caster sugar

  • 1 egg yolk

  • ¼ cup baking cocoa

  • 1 cup plain flour

  • ¾ cup White Chocolate Melts

    for icing

  • 2 tbsp cream

    for icing

Equipment

  • 1 oven trays
  • 1 baking paper
  • 1 electric mixer
  • 1 mixing bowl
  • 1 sifter
  • 1 plastic wrap
  • 1 rolling pin
  • 1 medium-size star cutter
  • 1 wire racks

Instructions

  1. Preheat oven to 180C. Line 2 oven trays with baking paper.
  2. Beat butter and sugar together until light and creamy. Add egg yolk.
  3. Sift baking cocoa and flour and stir into mixture. Knead mixture lightly, shape into a ball then wrap in plastic wrap and refrigerate for 20 minutes.
  4. Roll out between sheets of baking paper and cut out stars with a medium-size star cutter.
  5. Place on oven trays and bake for 12 minutes.
  6. Cool on tray for 5 minutes before transferring to wire racks to cool completely.
  7. To make the icing, melt the White Chocolate Melts with the cream in a small bowl over simmering water or in the microwave until smooth. Allow to cool slightly.
  8. Once the cookies are completely cool, spread a small amount of icing on the flat side of one cookie and sandwich it with another.
