Chicken Cashew Stir-Fry

This recipe is a one wok wonder with interesting flavours and colours and will quickly become a week night favourite.

Ingredients

  • 2 tsp Edmonds Fielder’s cornflour

  • 1 egg white

    at room temperature

  • 1 tsp salt

  • 300g chicken thighs

    cut into thin strips

  • 2 tbsp hoisin sauce

  • 1 tbsp soy sauce

  • 2 tsp sesame oil

  • 1 tsp sweet chili sauce

  • 3 tbsp vegetable oil

  • 1/2 c cashew nuts

  • 1 clove garlic

    finely chopped

  • 1 tsp fresh ginger

    finely chopped

  • 1 red capsicum

    thinly sliced

  • 100g button mushrooms

    sliced

  • 2 spring onions

Notes

Tip
Using chicken thighs instead of breast can prevent the meat from becoming dry and chewy in a high-heat stir-fry.
Variation
Try substituting peanuts for cashews and beef for chicken.

    Such an easy recipe. I have tried something similar to this using peanuts and beef instead. The ingredients are very much similar to a lot of Chinese food recipes.

    Yummy! Nice recipe that is pretty straight forward and looks delish! I would use Organic free range chicken and organic veges we buy from the Farmer’s Markets every Sat 🙂 I think even my 7 year old may eat this! Satay is yummo and I haven’t had it for ages, so will give this recipe a go 🙂

    This sounds great with easy to follow instructions too. I might have to try and see if the kids like this once I have got all the ingredients. It’s great to get new recipe ideas that the family will eat especially stir fry’s.

    I love that this chicken stir fry uses thighs vs Breast… I find breast very dry and especially when cooking at higher temps like stirfrys it becomes tasteless and chewy sometimes.
    This recipe sounds so quick and simple too and one wok wonder… Love it!! Convienance and minimal clean up always a plus for us.
    Stirfrys are so versatile too.. Depending on season adding fresh veg super simple too

    Yumm this sounds absolutely delicious. We are right into our chicken stirfrys at moment so will definitely have to try this one out. And I love satay flavor its so good. Definitely will be writing this recipe down for later in the week.
