Mexican crunch

All the flavours of Mexico combine to make this easy, kid-pleasing dinner. Serve the crushed corn chips in individual bowls and let the kids help themselves to the spiced mince, veggies and cheese. Easy peasy.

Ingredients

  • 500g lean ground beef

  • Taco seasoning

    Use one packet or to taste

  • ¾ cup water

  • ¼ cup sour cream

  • 12 cherry tomatoes

    cut in half

  • 1 cup lettuce

    finely shredded

  • 1 cup cheese

    finely shredded

  • 500g packet corn chips

    crushed

Equipment

  • 1 fry pan
  • 1 serving bowls

Instructions

  1. In a fry pan cook ground beef until brown.
  2. Stir in taco seasoning and 3/4 cup of water. Cover and let simmer until liquid is reduced.
  3. Set out the dishes of prepared ingredients (beef, sour cream, tomatoes, lettuce, cheese).
  4. Add a serving of crushed corn chips to each person’s bowl and let the kids add the beef, sour cream, tomatoes, lettuce and cheese on top.
