Ingredients
600g chicken thigh fillets
5 burger buns burger buns
or 1 loaf of Turkish bread, sliced and toasted
3 cups lettuce
shredded
2 large tomatoes
sliced
1/4 onion
finely diced, for marinade
1 clove garlic
for marinade
½ tbsp paprika
for marinade
1 tsp oregano
dried or fresh, for marinade
3 tsp cardamom pods
for marinade
¼ tsp piri piri spice mix
for marinade
1 tbsp olive oil
for marinade
1 tbsp lemon juice
for marinade
⅓ cup mayonnaise
2 tbsp sweet chilli sauce

- 1 mortar and pestle
- 1 meat mallet
- 1 frying pan or griddle/BBQ
- 1 small bowl
Instructions
- Mix all marinade ingredients (onion, garlic, paprika, oregano, cardamom pods, piri piri spice, olive oil, lemon juice) together with a mortar and pestle until they become a paste.
- Pound the chicken fillets as flat as you can with a mallet or similar.
- Brush the marinade onto the chicken and refrigerate for 30 minutes to 1 hour.
- Fry the chicken in a frying pan or on a griddle/BBQ until cooked through but not too brown.
- Combine the mayonnaise and sweet chilli sauce in a small bowl.
- Toast and butter the buns or Turkish bread, then assemble the burgers with the cooked chicken, mayonnaise, sliced tomato, and shredded lettuce. Serve immediately.
