Portuguese chicken burgers

Use chicken thighs for this yummy recipe to make the most of their moistness. Piri piri spice mix gives the chicken burgers their Portuguese flavour.

Ingredients

  • 600g chicken thigh fillets

  • 5 burger buns burger buns

    or 1 loaf of Turkish bread, sliced and toasted

  • 3 cups lettuce

    shredded

  • 2 large tomatoes

    sliced

  • 1/4 onion

    finely diced, for marinade

  • 1 clove garlic

    for marinade

  • ½ tbsp paprika

    for marinade

  • 1 tsp oregano

    dried or fresh, for marinade

  • 3 tsp cardamom pods

    for marinade

  • ¼ tsp piri piri spice mix

    for marinade

  • 1 tbsp olive oil

    for marinade

  • 1 tbsp lemon juice

    for marinade

  • ⅓ cup mayonnaise

  • 2 tbsp sweet chilli sauce

  • 1 mortar and pestle
  • 1 meat mallet
  • 1 frying pan or griddle/BBQ
  • 1 small bowl

Instructions

  1. Mix all marinade ingredients (onion, garlic, paprika, oregano, cardamom pods, piri piri spice, olive oil, lemon juice) together with a mortar and pestle until they become a paste.
  2. Pound the chicken fillets as flat as you can with a mallet or similar.
  3. Brush the marinade onto the chicken and refrigerate for 30 minutes to 1 hour.
  4. Fry the chicken in a frying pan or on a griddle/BBQ until cooked through but not too brown.
  5. Combine the mayonnaise and sweet chilli sauce in a small bowl.
  6. Toast and butter the buns or Turkish bread, then assemble the burgers with the cooked chicken, mayonnaise, sliced tomato, and shredded lettuce. Serve immediately.

Notes

Tip
These burgers are not only a wonderful, easy, tasty meal but the chicken fillets would even be fantastic chopped up in a salad, or just as is on your BBQ.
Variation
These Portuguese chicken burgers might be a bit spicy for little kids but you could cut down on the spices to make them more acceptable.
Variation
You can use paprika in place of piri piri spice mix if you can’t find piri piri.
