Mini frittata

These little beauties are perfect for lunch or dinner. If you make food look cute, you’ll have a much better chance of the kids eating them!

Ingredients

  • vegetable oil spray

  • 1-2 large zucchini

    sliced into 5mm ribbons

  • 8 large eggs

    lightly beaten

  • ¼ cup low fat milk

  • ½ cup basil leaves

    finely sliced

  • 50g feta

    crumbled

Equipment

  • 1 12 cavity muffin tray
  • 1 mandolin
  • 1 potato slicer
  • 1 sharp knife

Instructions

  1. Heat oven to 200ºC conventional (180ºC fan-forced).
  2. Spray a 12 cavity muffin tray with oil spray and line the sides of each one with zucchini ribbons.
  3. Mix eggs, milk and basil leaves together and season well.
  4. Spoon egg mixture into each cavity, top with feta and place in oven.
  5. Bake for 15-18 minutes or until cooked.
  6. Remove from oven and allow to sit for a couple of minutes before carefully removing each one.

Notes

Tip
To slice zucchini, you can use a mandolin, potato slicer or a sharp knife.
Tip
Make sure you grease the muffin cavities well so the frittatas are easy to remove.
Variation
You could use bacon, ham, prosciutto or even some smoked salmon instead of zucchini wraps.
Variation
You could also leave out the wraps altogether and just have frittata.
