Strawberry chia fridge jam

Everything about this strawberry fridge jam is good - there’s no cooking, it’s refined-sugar free, it’s packed full of the superfood chia and it only takes about five minutes to prepare.

Ingredients

  • 250g strawberries

  • ⅓ cup chia seeds

  • ¼ cup pure maple syrup

Equipment

  • 1 food processor
  • 1 bowl
  • 1 jar

Instructions

  1. Wash strawberries, remove stems and leaves and place in the bowl of a food processor. Blitz for a few seconds until roughly pureed. Alternatively, you could mash the strawberries with a fork.
  2. Transfer to a bowl and stir through chia seeds and maple syrup.
  3. Spoon into a clean jar and refrigerate for at least an hour to set.
  4. Use as you would normal jam – on toast, scones, etc.

Notes

Tip
This raw jam will keep for at least two weeks in the fridge.
Tip
Alternate honey for the maple syrup if you prefer.
Storage
Store in the fridge for up to 2 weeks.
